The truth is, there really is a ton of misinformation about coffee everywhere! 

First, you must start with the best raw coffee beans.  Coffee crops are quite variable; a great Colombian one year may be horrible the next, and vice versa, so roasters have to cup (taste) new coffees constantly.

Second, after the best beans are acquired they must be roasted.  The roasting process is where a great coffee can be destroyed, you see coffee has no real flavor in the raw un-roasted form and it is only through the roasting process that the flavors are developed.  Each coffee origin will have its own peak roast level that will bring out the absolute best flavors in that bean.  That is what I love to do - find that peak roast level.

Third, all coffee beans begin to stale after roasting, almost immediately in fact.  This staling occurs primarily, due to oxidation, and unless the fresh roasted beans are put in an airtight, oxygen free environment this staling continues until the coffee is completely void of any flavor, and becomes bitter.  Grinding coffee accelerates the staling, because more surface area is exposed to the air.  Once the beans have been ground they will go stale in hours.

Does the coffee you buy now have a roasting date on the package?  Probably not!  Are you drinking stale coffee?   Unfortunately you probably are.   Now that you know how coffee stales, you can make a more informed decision when purchasing your coffee.
